“I was lucky enough to be born in Barbados. My father was Irish and a missionary when he met mum. He left the church to teach science and had five children within six years so he was certainly good at biology!
My love of cooking came from my mum and grandma who taught me their secret family Bajan recipes. The same recipes I’ll be passing down to my daughter, Eliane. As the eldest of five, I was expected to cook for my siblings. Let’s just say, no-one ever went hungry! Years later, I honed my skills in a bunch of British restaurants but to be honest, nothing beats the taste of home.”
“I originally went to Barbados with my son Louis for six months – and ended up staying 15 years! Barbados can steal your heart like that. My love affair with this blissful island started in 1999 when I moved there to teach windsurfing. But I fell in love with the place and ended up buying and running a thriving bar, Mojo, for ten years.
Myself, Danny, Louis and Finley the dog moved to Brighton in 2014. We may have traded white sandy beaches for pebbles but we've been welcomed with open arms by the people of Brighton and have very much found our new spiritual home."
